How to make healthy apricot, peanut and coconut energy balls in less than 10 minutes

I was sat at home writing a post the other day and I got hungry, so I had a look around the kitchen to see what there was. I had two options - brown rice or cereal. No and nope. So either I got seriously hangry, or I made something.
I chose to make something (begrudgingly) - but I wasn't about to run out in the rain to get ingredients, so I knocked these up using store cupboard ingredients - and it turned out surprisingly well.  These little balls take less than 10 minutes to make and taste delicious. They've now become my go-to snack, so it's a good thing their all-natural and healthy!


So let's get straight to it, here's what you need to recreate these snacks at home...

// Ingredients //

- 120g unsalted peanuts, ground
-  80g dried apricots
- 4x dates, pitted
- 1 tsp cinnamon
- A few sprinkles of desiccated coconut 

// Method //

1.  Put the peanuts into a food processor (I used a NutriBullet in this recipe), and blitz them until there's no big chunks left.
2. Add the dried apricots, the pitted dates and the cinnamon and blitz again. The mixture will get thick very quickly, so depending on how good your processor is, you might need to stir it a few times to make sure everything is blended properly.
3. The mixture is ready after about 30 seconds - but you can tell because it starts to clump together.
4. Use your hands to roll the mixture into balls. I go for a medium size and it makes about 10 - but depending on how big your balls are (snort), you might make more or less than that.
5. Shake a handful or two of the desiccated coconut onto a plate, then roll each ball in it. Press down a little bit as you do it to make sure the coconut sticks.
6. Place the balls back on a plate and store in the fridge for when you want to eat them. They keep for a few days - if you still have any by then!


So quick, so easy - and such a good healthy snack for when you're feeling hungry after a workout or between lunch and dinner.
